Simple and Delicious Banana Bread Recipe

This is one of my all time favourite recipes. It is super quick and easy to make – so easy in fact that I made this one right in the middle of our 5 o’clock crazy hour while getting dinners organised!! It really is one of those recipes that you will keep forever.

Normally I like to bake during the day when things aren’t quite so hectic, but I noticed three bananas that weren’t looking particularly happy, and I didn’t think they would make it through another night! Plus banana bread is one of Fred’s favourite foods, so it was a special treat to put in his lunch box the next day!

I have been cooking this particular recipe for years and originally found it at Simply Recipes.

I love the fact that it has been passed down from generations – it’s a winner!!

Banana Bread Recipe

Ingredients

  • 3 or 4 ripe bananas, smashed
  • 1/3 cup melted butter
  • 1 cup sugar (can easily reduce to 3/4 cup)
  • 1 egg, beaten
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups of all-purpose flour

Method

No need for a mixer for this recipe. Preheat the oven to 350°F (175°C). With a wooden spoon, mix butter into the mashed bananas in a large mixing bowl.

Mix in the sugar, egg, and vanilla. Sprinkle the baking soda and salt over the mixture and mix in.

Add the flour last, mix. Pour mixture into a buttered 4×8 inch loaf pan.

Bake for 1 hour. Cool on a rack. Remove from pan and slice to serve.

    Thanks Sue! Unfortunately our bananas are becoming sad quite quickly in this heat! But a lovely excuse to make this yummy treat!
