Baking – Choc Coconut Slice

This is one of those recipes that just takes me back to childhood. My Mum made this for us all the time, and now she makes it for her grandchildren all the time. In fact, Fred was so confused why I was making it and not Grandma. He thought it was just wrong that we would have it when Grandma wasn’t sharing it with us!

It is so easy to make! Another fabulous one to freeze for lunch boxes!

Ingredients:

  • 125g butter
  • 3/4 cup sugar
  • 1 cup coconut
  • 1 egg
  • 1 cup SR flour
  • 1 tbsp cocoa

Icing:

Mix together:

  • 1 cup icing sugar
  • 1tbsp butter
  • 1 tbsp cocoa
  • a little milk

Method:

  1. Mix the coconut, flour, cocoa and sugar together
  2. Melt the butter, cool and beat in the egg
  3. Mix all together and press into a greased tray
  4. Bake in a moderate oven for 20 minutes
  5. Ice the slice while still warm and sprinkle coconut over
  6. Cut into squares when cool
