Perfect Corned Meat Glaze

I am a huge fan of corned meat. It is real comfort food – fabulous with mashed potato, veges and white sauce.

But I thought I would be daring and try out a few different glazes for a bit of a change. And after trying a few pretty good ones, I finally struck gold!

I guarantee that your family will fall at your feet and beg you for this recipe – yes it is THAT good! (But the kick-your-heels up and jump for joy best part, is that it is so super quick and easy!)

I cook my corned meat in the slow cooker – love that I can put it on as soon as I get up and then just leave it. And then the glaze is your very last step.

Ingredients

  • 2 tbsp butter
  • 1 tsp mustard
  • 5 tbsp tomato sauce
  • 1/2 cup brown sugar
  • 3 tbsp vinegar

1. Mix all ingredients together in a saucepan until combined and hot. (or you can use the microwave!)

2. Pour over cooked sliced corned meat and put in the oven for 10-15 mins on 180 deg.

Voila – that easy. While it is in the over, you can whip up your veges so everything is all ready to go when it is glazed.

The kids love having corned meat on their lunches, so the leftover should see you through the next few days of school boxes!

    How do you cook it in the slow cooker? Please excuse my ignorance!

    Do you fill the pot up with water the same as on the stove top? And add the same things (for me its a carrot, onion and peppercorns).

      Sarah I put water in about 2/3 of the way up the meat. I add a chopped onion, and a couple of Bay Leaves, but yes I think anything that adds just a little bit of flavour works well. I allow around 8-10 hours on low to cook. Yum my mouth is watering as I type this lol.

    Me again! It was DELISH! And made for such an easy dinner. Its usually such a messy meal on the stove top, I am now a corned beef silverside convert! My 5 year old daughter loved it so much that she has asked for it cold in her lunch box today. I might have to be really brave and finally try a roast in the slow cooker now….have you done a roast in yours?

      Yes I do my roasts in the slow cooker too – they are just so tender – the meat just falls apart when it’s done.

        Do you have to add salt? I’ve never had corned meat ( other than from a can)

          Noooo – There is plenty of salt in the normal corned meat. In fact we usually buy the salt reduced one as we like the flavour better. Once you try this, you’ll never have it out of a can again! :)
