Tuna Mornay Recipe – Our Family Favourite

Sep 26

This is a very special recipe to me. Not just because my children LOVE it, but it’s also the very first recipe that my mother-in-law gave to me. Daddy Smiles and I weren’t even living together yet, but one day she pulled out a hand-written recipe and slipped it into my hand. It was her famous and delicious Tuna Mornay recipe.

I was incredibly touched, and felt it was her way of welcoming me into the family.

If you are feeding toddlers, try serving it with risoni – it’s a perfect combination!

This is exactly as it was written out for me (although I now cheat and heat the milk in the microwave!).

White Sauce:

  • 600ml milk
  • 1 small onion
  • 1 bay leaf
  • 2 tbsp butter
  • 4 tbsp plain flour
  • salt and pepper to taste
Put milk into saucepan with finely chopped onion and bay leaf. Bring to scalding point, remove from heat and set aside.
Melt butter in large saucepan, stir in flour and cook for 1-2 mins. Mixture should not colour.
Gradually stir in milk, cook while stirring until mixture boils and thickens.
Reduce heat and cook for a few minutes.
Add: 1 dessertspoon curry powder and mix (more or less to taste). Remove bay leaf.
Add: 1 425g tuna chunks (in brine or psringwater)
Add: 125g (1/2 small pack) of Kraft cheese.
Bring gently to boil, stirring some of the time, but do not boil.
Add: Parsley, capsicum, celery, peas, small grated or thinkly chopped carrot, broccoli, corn (any or all!)

Turn your MIL’s handwritten recipe into a tea towel! What a great story and what a way to preserve that paper recipe!!

  4. Looks yummy thanks Nat and what a lovely Mother-in-law, you must’ve been pretty special to her :-) I recently bought a cheapie slow cooker from Coles and I absolutely love it. Would you or your Internet friends have any slow cooker recipes that work without fail and any tricks and tips would be great too, thanks Nat, no rush of course.
    Cheers, Jules :-)
